Government Watchlist Cookies (a.k.a. Grantham Gingerbread). They use ammonium carbonate, which makes them very light and airy and probably puts me on a government watchlist (well, ammonium carbonate + citric acid [elderflower cordial] + bicarbonate of soda [cleaning]).
