Krak des Chevaliers -- a late 12th-century Hospitaller fort, and one of the greatest Crusader castles. I had the great privilege of spending several hours exploring this site. Nothing was off-limits -- no ropes, no rules, no health and safety (gone mad). So much fun. (FYI, all these photos are scans from prints.)
